½ chilli, de-seeded and finely chopped

GRIDDLED PINEAPPLE WITH BUTTER

SERVES 2 | READY IN 10 MINS | VEGETARIAN

INGREDIENTS

SWAP SHOP

1 tbsp butter

½ pineapple, peeled, core removed and chopped into quarters

3 peaches, halved

1 tbsp caste sugar

1 tbsp honey or maple syrup

salt and pepper

1. Melt the butter in a non-stick griddle or frying pan over a medium-hot heat. Add the pineapple pieces and sprinkle with the sugar. Griddle each side for 2–3 minutes, until caramelized and golden.

2. Remove the pineapple from the heat and lightly season with a little salt and pepper.

3. Slide each piece on a wooden skewer, if available, and eat hot or cold.
